Chris,

You should be able to go to a judge and have them extend the amount of time
you have to find alternate homes!  No lawyer or anything required, just go
down to the courthouse and get on that day's docket.  Explain that these are
special needs dogs who will take time to re-home.

In the meantime, have you contacted the other rescue near St. Louis?  Maybe
they can help!  There has to be something that can be done!
