I used to fill a glass serving bowl with ice and water and set it outside underneath a golf umbrella I opened and set on the grass, that worked out really well.  When I would be running errands, I had 2 keys to my BUV and I would leave it running, locked, with the A/C on high, maximum cool, ice cubes in 2 water dishes for front and back seats, and white sheets on the seats and a sun visor on the windshield and park in the shade and quickly run in and out dropping off videos, mailing letters, etc.  I hope these ideas that worked for me can also be useful to someone else too.
